While pumpkin-spice lattes and pies may be the first things that come to mind, there's a healthier and more protein-packed way to satisfy your autumn cravings – high-protein pumpkin muffins! Not only are these muffins a delicious treat, but they also come with the added benefit of being rich in protein, which is important for supporting muscle mass, tissue repair, and a healthy immune system. In addition, pumpkin is a good source of dietary fiber, which aids in digestion, blood sugar regulation, and helps you feel full and satisfied. 

Savour the flavour of Fall and try this simple and healthy high-protein pumpkin muffin recipe below: 

Ingredients 

  • 2 scoops of protein powder (vanilla or unflavoured) 
  • 3 eggs 
  • 1 cup of pumpkin 
  • 3/4 cup of almond flour 
  • 1 Tbsp vanilla extract 
  • 1 Tbsp pumpkin pie spice or cinnamon 
  • 1/2 tsp of baking soda or powder 
  • 1/2 tsp salt 

Directions 

  1. Preheat oven to 350 degrees. 
  2. Add all the ingredients to a bowl and whisk together to create your batter. 
  3. Pour into a lightly greased muffin tin. 
  4. Bake muffins for 20-22 minutes. This makes 8 muffins, or you can use a smaller tray for more. 
  5. Let cool for 5 minutes and enjoy!
